Emmentaler sandwich with pears

Ingredients for 4 servings

1 small cicorino rosso (Italian chicory)
2 small pears
1 tsp lemon juice
150 g Emmentaler AOP
4 tbsp cream cheese
1 tbsp mustard
20 g onion sprouts
4 large sandwich rolls

Preparation

Cut the cicorino rosso in strips. Quarter the pears, remove the core and cut into slices. Drizzle over some lemon juice. Cut the Emmentaler AOP in thin slices. Mix the cream cheese with mustard.

Halve the rolls, spread the cream cheese over the cut surfaces. Cover the base of the roll with all the ingredients, cover with the top half of the roll and press down.
