  • half-white bread, sliced, toasted
  • butter, soft
  • mustard
  • redcurrant jam
  • young spinach
  • red onion, cut into rings
  • Emmentaler AOP Extra, finely sliced or coarsely grated
  • eggs
  • milk
  • frying butter
  • as needed: pepper from the mill

Preparation

Butter each slice of bread. Now spread mustard over half the slices, and spread jam over the rest. Cover the mustard-coated slices with some spinach and onion rings, then top with Emmentaler AOP URTYP®. Season to taste. Cover each prepared slice with a jam-coated slice (jam-side facing down!). In a bowl, whisk together the eggs and milk. Press the croque monsieur together and dip each side in the egg-milk mix. Heat the clarified butter in a non-stick frying pan and fry each sandwich over a medium heat, 4 minutes each side, until golden brown. Remove from pan, cut diagonally, season with freshly milled pepper and serve immediately.
