The flavour of the region

Distinctly tangy with a unique taste: the regional goût du terroir.

The initial flavour is reminiscent of caramelised sugar and boiled cream.

Followed by a finely aged aroma with a tangy, herbal note.

Despite the long ripening time, the cheese has a balanced sweetness and a creamy finish.

Soft and slightly crumbly on the tongue.

The Hüpfenboden mountain dairy is the only place in the world that produces it.

With a great deal of love and time. At 1,016 metres above sea level.

With raw milk from neighbouring farms within a maximum radius of 10 km.

And bacteria cultures they cultivate themselves.

Ripened in a cheese cellar in Emmental.

Tended to by hand by a master cheesemaker at 90% relative humidity for at least 12 months.

Ripened like in the olden days.
