When Switzerland celebrates its birthday, we invite friends and family and let the corks pop! And there’s no better accompaniment than a culinary firework of Emmentaler AOP cheese, cured ham, fruit and other delicacies – arranged like a firework star exploding in the sky. Happy Birthday Switzerland!
Place six triangles of sliced Emmentaler AOP in a circle around the centre of a marble plate so they form a hexagon. Position another six triangles over the hexagon, slightly offset, to create a star.
Then place long strips of Emmentaler AOP cheese around the star, three in every cardinal direction. These are the flying sparks of the exploding firework.
Drape a few slices of cured ham across the centre of the star. In the gaps between the cheese strips, place two slices of cucumber so they overlap, and bracket them with two half-slices of radish. For additional colour, take eight dried apricot halves and position them around the star in all cardinal and intercardinal directions. Fill the gaps with crackers.
Cut two green tomatoes in half and position each half centrally on the cucumber slices, then decorate the firework star with a few microgreens.
Your 1 August cheeseboard is complete. Now it’s time to let the corks pop over your culinary firework and raise a glass with your guests to celebrate Switzerland’s birthday.
